Located in Milton, Delaware, the Dogfish Head Brewery was founded in 1995 by Sam Calagione. The brewery’s “extreme” beers have quickly become a favorite of Aroma Thyme Bistro’s owner/chef Marcus Guiliano.
Dogfish Head's signature product is its line of India Pale Ales (IPAs), which are offered in three varieties: 60 Minute, 90 Minute, and 120 Minute IPA. Their names refer to the length of the boil time of the wort in which the hops are continuously added. The longer hops are boiled, the more bitterness is imparted to the beer.

A full-bodied brown ale with smooth hints of pumpkin and brown sugar. We brew our Punkin Ale with pumpkin meat, organic brown sugar and spices. This is the perfect beer to warm-up with, as the season cools.

A deep, mahogany ale brewed with beet sugar, green raisins, and Belgian-style yeast. As complex as a fine, red wine.

60 Minute IPA is continuously hopped - more than 60 hop additions over a 60 minute boil (getting a vibe yet of where the name came from?). 60 Minute is a session India Pale Ale brewed with a slew of great NorthWest hops. A powerful, but balanced East Coast I.P.A. with a lot of citrusy hop character.

Esquire Magazine calls our 90 Minute IPA., "perhaps the best I.P.A. in America." An Imperial I.P.A. brewed to be savored from a snifter. A big beer with a great malt backbone that stands up to the extreme hopping rate.

Too extreme to be called beer? Brewed to a colossal 45-degree plato, boiled for a full 2 hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month & aged for another month on whole-leaf hops!!

Bold, yet smooth! Fermented with dates and figs, this bone-crusher has a completely unique flavor.

Indian Brown Ale is well-hopped and malty at the same time.

A big, belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging.

Brewed with ingredients from every continent (crystallized ginger from Australia, water from Antarctica, basmati rice from Asia, etc...), this is slightly spicy ale, with a mouthful of rich flavors.

This is the beer you've heard so much about. Dark, rich, roasty and complex, World Wide Stout has more in common with a fine port than a can of cheap, mass-marketed beer. Brewed with a ridiculous amount of barley. Have one with (or as!) dessert tonight!

An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted.

Preserved pottery jars found in the Neolithic villiage of Jiahu, in Henan province,Northern China, has revealed that a mixed fermented beverage of rice, honey and fruit was being produced that long ago - right around the same time that barley beer and grape wine were beinginning tobe made in the Middle East!

This beer is based on chemical analysis of pottery fragments found in Honduras which revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1200 BC. As per the analysis, Dogfish Head’s Theobroma (translated into 'food of the gods') is brewed with Aztec cocoa powder and cocoa nibs, honey, chilies, and annatto (fragrant tree seeds). It's light in color - not what you expect with your typical chocolate beer. Not that you'd be surpised that we'd do something unexpected with this beer!

On a freezing day each mid-winter, 280 cases of Ommegang ale are transported forty five minutes east of Cooperstown to the heart of "cave country." The beer is lowered 156 feet into the celebrated Howe Caverns. This is the only cave-aging of beer on American soil in recent memory. Forty meters below ground, at a constant temperature of 52 degrees F.
Cave-aging (and cellar-aging) were traditional aging methods before modern refrigeration, and today are still used in the Champagne region of France. Remarkably, similar conditions are at hand in Schoharie County in New York. In the section of the Allegheny Plateau north of Cobleskill, which is capped by early to middle Devonian Helderberg and Onondaga limestones, conditions are ideal for cave formation. The most celebrated of these formations is Howe Caverns.

The brewing methods used by Unibroue, Canada, have been inspired by the great European brewing traditions and, in this respect, are one of a kind in North America. The methods used stand out, in particular, from the brewing methods of the mass-producing breweries and even from the other North American craft brewers because the beer is refermented in bottles and partly-clarified only. Through these methods, specialty beers with an evolutive taste and a long shelf life are produced. The manufacturing of the beer at Unibroue is done in five phases: brewing, fermentation, clarification, bottling and kegging and, finally, refermentation in bottles in the holding room.
